Championing the remote Himalayan kingdoms of Nepal and Bhutan, Tony and Sheila Preston bring those enchanting lands of mountains and monasteries to the streets of Huddersfield and, in doing so, enhance the already diverse food culture of Huddersfield Town. The Nepalese offer is similar in spicing to Indian food but with added zest, while Bhutanese dishes are simpler but no less intriguing, with chilli and cheese being something of a mainstay. Soy also finds favour in stir-fries that may take in spring onions, green peppers, carrots and beansprouts. Ezay, a soft batter shell, filled with finely chopped pork and the lively poke of green chilli, is sufficiently potent to divert attention from the eminently missable spectacle of big screen Bhutanese folk dancing. Among the mains, the Yak & Yeti special finds chicken given some clay oven action and the benefit of a dark, rich savoury sauce.
